Frozen yoghurt
Frozen yoghurt (also of course frozen yogurt) is a frozen dessert much like ice-cream but made with yoghurt as the main ingredient.
The main reason for making frozen yoghurt rather than ice cream is for health reasons - because frozen yoghurt is made from low-fat or non-fat yoghurt it tends to be healthier. Note that sugar or sweetener are added during the process.
Frozen yoghurt is normally made in an ice-cream making machine. Note that yoghurt has a higher freezing point than milk so it takes much longer for it to freeze than traditional ice cream.
Apart from the health benefits, frozen yoghurt also has a distinctive taste. It is available in many of the same flavours as ice-cream.
Cranberry Yoghurt Ice Cream Recipe
Ingredients
1 pound fresh or frozen cranberries
1/2 to 3/4 cup granulated sugar
1 1/4 cups whipping cream
2 tablespoons plain yoghurt
Method
Put cranberries in a saucepan and pour 1 cup boiling water over.
Cover and leave for 5 minutes.
Bring to simmering point, cook for 5 minutes, turn off the heat and leave for 5 minutes.
Bring to simmering point again and cook for 5 minutes.
Remove from the heat, stir in the sugar, and reduce to a purée.
Allow to cool.
In a bowl, lightly whip the cream with the yoghurt, then fold into the purée.
Pour the mixture into a container.
Cover and freeze until firm, beating twice at hourly intervals.
About 20 minutes before serving, transfer the ice cream to the refrigerator.
