Lemon Yoghurt Muffins

Ingredients

3 tablespoons granulated sugar

1/2 cup water

1 teaspoon grated lemon zest (yellow part of rind only)

3 tablespoons fresh lemon juice

Batter

2 cups unbleached all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3 tablespoons butter, melted

1 1/2 teaspoons grated lemon zest

2 tablespoons fresh lemon juice

2 eggs

1 (8 ounce) carton low-fat lemon yoghurt
